Heart-Healthy Fattah
This dish is the iconic Fattah, a celebratory meal traditionally served during Eid al-Adha. It’s a beautifully textured dish featuring layers of toasted pita, fluffy white rice, and tender meat, all brought together by a tangy garlic-vinegar tomato sauce.

2. The Preparation
Step 1: The Meat (Low-Sodium Stock)

In a large pot, lightly sear the beef cubes in a teaspoon of olive oil.

Add the onion (halved), bay leaves, and cardamom. Cover with water.

Simmer for 1–1.5 hours until the meat is fork-tender.

Tip: Skim off any fat that rises to the top to keep the broth light. Drain the meat and keep the broth for the rice and bread.
Step 2: The Crispy Bread

Cut the pita into bite-sized squares.

Instead of frying, toss them with a drizzle of olive oil and bake at 350°F (180°C) for 10 minutes until golden and crunchy.
Step 3: The Fluffy Rice

Rinse the rice until the water runs clear (this removes excess starch).

Cook the rice using the meat broth you prepared earlier. This infuses the rice with flavor without needing extra salt.
Step 4: The Red Garlic Sauce (The “Daqqa”)

In a small pan, sauté the minced garlic in olive oil until fragrant (don’t let it brown too much).

Add the vinegar (stand back, the steam is sharp!).

Stir in the tomato purée and tomato paste. Simmer for 10 minutes until thickened. Season with black pepper instead of heavy salt.
3. Assembly (Building the Layers)

الحساء الأساسي: Place the toasted bread at the bottom of a large platter. Drizzle with about ½ cup of the hot meat broth to soften it slightly (but keep some crunch).

The Middle: Spread the cooked rice evenly over the bread.

The Topping: Pour the red tomato-garlic sauce over the center of the rice.

The Crown: Arrange the tender beef cubes on top.
